Corned Beef Stew

This is a tomato-based Nigerian sauce made with corned beef. It can be eaten with a wide variety of staple foods, and common variations include stew with minced meat.


1 large tin of corned beef

400g chopped tomatoes

1 large onion (chopped)

1 large pepper (chopped)

Seasoning cubes

1 Tomato puree

3 cooking spoonfuls of Vegetable Oil



One chopped clove of garlic (optional)



Step 1- Add vegetable oil to a frying pan. When hot, add the tin tomatoes, onions, garlic and chopped pepper, then fry for 5 minutes on medium-high fire.

Step 2- Next add the tomato puree and fry for 10- 15 minutes.

Step 3- Now add the corned beef, curry, thyme, seasoning cubes and cook on medium heat for 5 minutes.

Step 4- Turn down the heat and cook for another 5 minutes.
